Italian sausage is used in lots of different recipes in the US. For some reason, it just doesn’t seem to exist here in the UK. That is OK, because it is super easy to make and the results are better than store bought anyway.

Equipment

  • 1 large bowl
  • 1 large skillet

Ingredients
 
 

  • 1 lb ground pork 12% fat
  • 3 cloves garlic minced
  • 1 tbsp parsley minced
  • 1 tbsp red wine
  • 1 tbsp paprika
  • 2 tsp fine salt
  • 1.5 tsp black pepper toasted and coarsely cracked
  • 1 tsp fennel seeds toasted and coarsely cracked
  • 1 tsp onion powder
  • 1 tsp red pepper flakes
  • 1 tsp Italian herb mix
  • 1 tbsp olive oil

Instructions
 

  • Add all ingredients together in a large bowl and mix well.
  • Let rest over night.
  • Make small meatballs out of the sausage.
  • Heat olive oil in a large skillet over medium heat.
  • Add meatballs to the pan and shake to rotate the meatballs, every minute or so.
  • Cook until nice and brown, about 10 minutes.
  • Add to your favourite recipe.
