- 1 pineapple small, peeled and diced
- 1 mango peeled and diced
- 1 cup cherries pitted and diced
- 1 onion medium, diced
- 3 jalapenos finely diced
- 1 red bell pepper seeded and diced
- 2 limes juiced
- 1 cup coriander/cilantro chopped
- 1 tsp salt
Mix all ingredients together in a non-reactive bowl.
Refrigerate for at least 30 minutes, preferably overnight.
Serve with your favourite nachos or over grilled fish.
