It is based on a recipe my Dad makes. It is super simple to make with canned tomatoes. I, of course, had to over complicate things and start with whole tomatoes (trying to use up the batch we got this week from the farm).<\/p>\n<p><strong>Ingredients:<br \/>\n<\/strong>1\/2 chicken, skinned and\u00a0cut into 6 parts<br \/>\n3 lbs tomatoes<br \/>\n1 tbsp olive oil<br \/>\n1 medium onion, thinly sliced<br \/>\n4 cloves garlic roughly chopped<br \/>\n1\/2 cup mixed fresh herbs (parsley, basil, rosemary, thyme)<br \/>\n1 cup red wine<br \/>\nsalt and pepper to taste<\/p>\n<p><strong>Directions:<br \/>\n<\/strong>1. Wash tomatoes. Remove tomatoes after 30 seconds.
