Our generation is missing out on outstanding food.<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">I&#8217;ve been trying to find recipes that I loved as a kid. Here are two my Mom sent me that are from my Dad&#8217;s mother Dessie Johnson.<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">Today&#8217;s project is going to be making these recipes to see if I can make them taste like I remember.<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\"><strong>I think the salt should be a tablespoon or even a teaspoon but NOT a cup<\/strong><\/font><\/p>\n<p><strong><font size=\"4\" face=\"Verdana\">Hot Dill Pickles\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/font><font size=\"4\" face=\"Verdana\">Dessie Johnson<\/font><\/strong><\/p>\n<p><font size=\"4\" face=\"Verdana\">Pinky size cucumbers (a lot)<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">1 quart vinegar<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">2 quarts water<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">1 cup coarse salt<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">Bring to a boil.<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">Pack tightly in jars:<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">cucumbers<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">1 whole banana <\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">1 small (Pearl) onion<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">1 head fresh dill (or 1 teaspoon dried)<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">Pour biling mixture in packed jars to fill, seal jars.<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">Boil sealed jars 5 minutes<\/font><\/p>\n<p><strong><font size=\"4\" face=\"Verdana\">Lime Pickles\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/font><font size=\"4\" face=\"Verdana\">Dessie Johnson<\/font><\/strong><\/p>\n<p><font size=\"4\" face=\"Verdana\"><font color=\"#bf005f\">Prepare in crock, enamel or plastic Only.<\/font><\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">7 pounds medium size cucumbers<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">2 cups slated lime (hydrated)<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">2 gallons water.<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">Pour salted water over cucumbers and let set 24 hours.<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">Rinse thouroughly in several changes of water.Let set in water 3 hours. <\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">Drain.<\/font><\/p>\n<p><font size=\"4\" face=\"Verdana\">Mix together<\/font><font size=\"4\" face=\"Verdana\">;<\/font><\/p>\n<p><font size=\"4\">1 Tablespoon coarse salt<\/font><\/p>\n<p><font size=\"4\">1 teaspoon mixed pickling spices<\/font><\/p>\n<p><font size=\"4\">1 teaspoon celery salt<\/font><\/p>\n<p><font size=\"4\">1 teaspoon whole cloves<\/font><\/p>\n<p><font size=\"4\">2 quarts + 1 cup vinegar<\/font><\/p>\n<p><font size=\"4\">5 pounds sugar<\/font><\/p>\n<p><font size=\"4\">Pour over pickles and let stand over night.<\/font><\/p>\n<p><font size=\"4\">Next day bring entire mixture to a boil<\/font><\/p>\n<p><font size=\"4\">Simmer 40 minutes<\/font><\/p>\n<p><font size=\"4\">Pack in hot jar and seal.<\/font><\/p>\n<p><font size=\"4\">You need them set at least a week<\/font><\/p>\n","protected":false},"excerpt":{"rendered":"<p>It seems everyone has forgotten how to pickle and can things.
