I love spice beets. You can&#8217;t eat much at once but they&#8217;re awesome in small doses.&nbsp;<strong>&nbsp;<\/strong><\/p>\n<p>For this batch I used golden beets, makes for a beautiful presentation when mixed for serving.<\/p>\n<p><strong>Ingredients:<br \/>\n<\/strong>35 to 40 small beets or 15 large beets<br \/>\n2 cups sugar<br \/>\n2 cups water<br \/>\n2 cups white vinegar<br \/>\n1 teaspoon ground cloves<br \/>\n1 teaspoon whole allspice<br \/>\n1 tablespoon ground cinnamon<br \/>\n1 teaspoon whole cloves<\/p>\n<p><strong>Directions:<br \/>\n<\/strong>1. In a kettle, cook the beets until tender. Dip in cold water and peel off the skins. Slice 1\/4 inch thick or cut into quarters if using smaller beets.<\/p>\n<p><a title=\"image003.jpg\" href=\"https:\/\/i0.wp.com\/tonypauley.com\/food\/wp-content\/uploads\/2007\/09\/image003.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/tonypauley.com\/food\/wp-content\/uploads\/2007\/09\/image003.jpg?w=1920&#038;ssl=1\" alt=\"image003.jpg\"><\/a><\/p>\n<p>2. Pack tightly (snug but not bruising each other) into canning jars.<\/p>\n<p><a title=\"image005.jpg\" href=\"https:\/\/i0.wp.com\/tonypauley.com\/food\/wp-content\/uploads\/2007\/09\/image005.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/tonypauley.com\/food\/wp-content\/uploads\/2007\/09\/image005.jpg?w=1920&#038;ssl=1\" alt=\"image005.jpg\"><\/a><\/p>\n<p>3. In a large saucepan, combine the sugar, water, vinegar, ground cloves, allspice, cinnamon, and whole cloves.<\/p>\n<p>4.
